Self-Care Through Chicken Noodle Soup!Jan 28, 2022
Fall is here and winter is on the way, and there’s nothing more comforting than a homemade chicken noodle soup on a brisk day! Part of self-care is cooking good, healthy food for yourself, snuggling up with a good book and a throw blanket!
Here’s the simple recipe:
Melt 2-3 T butter or olive oil in a large dutch oven, add 1 organic onion chopped, 2c organic celery chopped, 2c organic carrots chopped, stir and cook until translucent.
Then, add 2-3t of thyme, t celery seed, t onion powder, t granulated garlic or fresh, 2T parsley, salt and pepper
Then, add two 32oz organic chicken broths, (or use Better Than Boullion according to directions) two organic bone-in chicken breasts, and boil for 20 minutes (take chicken out- set aside). While the broth is still boiling, add egg noodles to cook.
Take cooled chicken, shred and put back into the broth. Re-season with all the seasonings above, if you like, especially salt and pepper-I also add 1T organic turmeric powder too for anti-inflammation and color.
Add 1c heavy cream or coconut cream. Simmer on lowest setting. ENJOY!
